Preparation

In a stemmed glass, pour just enough absinthe to coat the inside, turning the glass to cover the surface. Pour out any excess absinthe. In a mixing glass, combine the remaining ingredients and stir with ice until chilled. Strain the contents of the mixing glass into the absinthe-rinsed glass.

A delicate, aromatic aperitif that balances gin's juniper backbone against the honeyed complexity of fortified wine and elderflower. The absinthe rinse adds a subtle anise whisper that lingers beneath the surface, lending an air of Parisian intrigue. Crisp and floral with a dry finish, it drinks like a more sophisticated, herbaceous Martini.
