Light on fire in half of passion fruit or lime

Preparation

Combine all ingredients with approximately one ounce of pebble ice in a cocktail shaker and whip shake for 8-10 seconds. Pour unstrained into a cocktail glass and fill with more pebble ice.

The Lapu Lapu is a tropical showstopper named after the Filipino warrior who defeated Magellan, traditionally served in a hollowed pineapple with a flaming rum float. The drink layers light and gold rums beneath a bright citrus blend of orange, lemon, and lime, with passionfruit syrup providing a tart-sweet backbone that ties everything together. The overproof rum crown adds boozy heat and caramelized notes when ignited, while a touch of effervescence keeps the rich, fruity body from becoming cloying.
