Combine all ingredients with approximately one ounce of pebble ice in a cocktail shaker and whip shake for 8-10 seconds. Pour unstrained into a cocktail glass and fill with more pebble ice.

The Mermaid Cafe splits the difference between a Scotch whisky sour and a tropical colada, landing somewhere unexpected and satisfying. Smoky malt and funky Jamaican rum form the backbone, while coconut cream and pineapple soften the edges into something rich and approachable.
