Fill a stemmed glass with ice and let sit to chill. In a mixing glass, combine the vermouth, absinthe verte (Obselllo), ruby port, and mescal, and stir with ice until chilled. Discard the ice from the stemmed glass, shaking out excess water. Strain the mixture into the chilled glass. Twist a swath of lemon peel over the drink and place it in the glass.
The Night Porter is a brooding, complex sipper that balances herbal intensity with vinous depth. Absinthe's anise bite meets the dried-fruit sweetness of ruby port, while mezcal adds a subtle smoky undertow that keeps the drink from tipping too sweet. The blanc vermouth ties everything together with a soft, floral backbone, creating a cocktail that drinks like a late-night conversation—layered, slightly mysterious, and lingering.
