Preparation
Fill a stemmed glass with ice and let sit to chill. In a mixing glass, combine the ingredients and stir with ice until chilled. Discard the ice from the stemmed glass, then strain the contents of the mixing glass into the chilled glass. Twist a swath of orange peel over the drink and place it in the glass.

La Belle Ferme is a spirit-forward aperitif that balances the warmth of cognac against bittersweet complexity. The Dubonnet and Aperol contribute layers of dried fruit and citrus peel, while a measured dose of absinthe adds an herbal undercurrent that lingers on the finish. The result is rich but bracing, with an old-world character suited for slow sipping.
