Combine all ingredients in a cocktail shaker and dry shake for 30 seconds. Add one large and one small ice cube, and shake until the small one melts. Double strain and serve.

The Amaretto Bitter balances sweet almond notes against a bright citrus backbone, with Aperol lending a subtle bitter edge that keeps the drink from tipping into cloying territory. A measure of overproof Jamaican rum adds unexpected funk and heat beneath the surface, giving the cocktail some muscle. The egg white creates a silky, frothy texture that softens the sharper elements and carries the marzipan-like aromatics to the nose with each sip.
