Preparation

Fill a small juice glass or a highball with ice and let it sit to chill. In a shaker, combine the scotch, lemon juice, simple syrup, absinthe, and egg white; shake to blend. Add ice and shake until chilled. Add the seltzer/soda water, then stir. Discard the ice from the glass (shaking out excess water) and strain the contents of the shaker into the chilled glass. Dash the bitters on top.
